Honda-ya Uirō

A must-try Uirō from the bracken confectionery specialist Honda-ya when visiting Yamaguchi. Unlike Nagoya-style Uirō which uses rice flour, a major feature of Yamaguchi's Uirō is that bracken starch (warabi-ko) takes center stage. Honda-ya has a long history, founded in 1917 (Taisho 6). Since the founder established the shop in front of Yamaguchi Station, they have continued the craft of making Uirō. Its specialty lies in the unique, bouncy texture unique to bracken starch and a refined, understated sweetness. In addition to classics like red bean and matcha, you can also enjoy seasonal limited flavors. It is even more delicious when served chilled, which further enhances its chewy mouthfeel.
