'Nebuto' is a white-fleshed small fish about 3 to 5 cm long, a relative of the Tenjikudai (scorpionfish). Because of its hard head, it is also known locally as 'ishimochi,' and it has been a beloved local flavor on dining tables since ancient times. Numakuma Yumukobo bakes this small fish to preserve its savory flavor with a crispy texture, making it rich in calcium.
