Toihaka is a new signature confection produced by Yamada-ya, an established maker of Miyajima's Momiji Manju. Yamada-ya is a long-standing Japanese confectionery shop founded in 1932 on Miyajima. Toihaka features smooth red bean paste wrapped in a soft dough kneaded with mochi flour, resulting in a moist and chewy texture. At the National Confectionery Expo, often referred to as the 'Olympics of Sweets,' it received the highest honor, the Honorary President's Award, in 2008. With its combination of fragrant dough and elegant bean paste, it is a staple Miyajima souvenir alongside Momiji Manju.
