Shogoin Nama Yatsuhashi
Yatsuhashi is a representative confectionery of Kyoto. Among its varieties, the moist and chewy Nama (raw) Yatsuhashi has been long loved for its cinnamon aroma and soft texture. It is one of Kyoto's staples, produced by the Shogoin Yatsuhashi Main Store. The origin of Yatsuhashi dates back to Genroku 2 (1689). It is said to have begun as a dry confection shaped like a koto (Japanese harp), sold at a teahouse in the Shogoin forest to honor the master koto player, Yatsuhashi Kengyo. Later, the Nama Yatsuhashi, which encloses sweet red bean paste, was created. The dough, made of rice flour and sugar flavored with cinnamon, has an elegant, chewy mouthfeel. With a single bite, the long history and refined atmosphere of Kyoto gently unfold along with the scent of cinnamon.
