Tsuruya Yoshinobu Tsubara-tsubara

A long-selling baked confection released to the world in 1996 by the Kyoto confectioner Tsuruya Yoshinobu. Born from the desire to provide 'unprecedented deliciousness,' it focuses not only on taste and aroma but also on 'texture.' The skin, slowly baked on copper plates, is moist and chewy. Inside, it is generously filled with ogura bean paste made from Hokkaido Tokachi adzuki beans. The name of the sweet is derived from a waka poem in the Man'yoshu; 'tsubara-tsubara' is said to mean 'deeply and to one's heart's content.' Despite its simple appearance that fits in the palm of your hand, an elegant sweetness spreads gently with every bite. It is a Kyoto sweet perfect for accompanying tea or as a small gift.
