Kyo Baum
Moist, soft, and with the gentle aroma of Uji matcha—'Kyo Baum' is a baumkuchen created by the company behind 'Otabe' (nama yatsuhashi) as their second major Kyoto souvenir. The batter uses plenty of Uji matcha and Kyoto-produced soy milk. The bitterness of the matcha and the mellow umami of the soy milk melt together. The beautiful three layers, where matcha and soy milk batters overlap, are inspired by 'Kasane' (layering) of the Junihitoe, a part of Kyoto culture. Each cake is carefully baked from start to finish by artisans. With a fluffy, moist melting texture and an elegant matcha aftertaste, it is loved by all generations as a representative of new Kyoto souvenirs.
