Ise Japanese Black Tea Roll Cake
Mie Prefecture is the third-largest tea-producing region in Japan. Matsusaka, in particular, is a famous area known for its deep-steamed sencha. We have created a roll cake using 'Wa-kocha' (Japanese black tea) made by fermenting these Matsusaka-grown tea leaves. Japanese black tea is characterized by a combination of black tea aroma and the umami of green tea, with low astringency and a mellow flavor. This flavor gently melts into the cream, harmonizing elegantly with the moist sponge cake. The interesting part is that despite being a Western-style pastry, it possesses a certain Japanese tranquility. It is a sweet treat unique to the tea-growing region of Mie that makes you want to take a relaxing break. We recommend enjoying it slowly with tea rather than coffee.
