Heiji Senbei

The legend of 'Akogi Heiji' has been passed down in Tsu since ancient times. It tells of a filial son named Heiji who continued to fish in a prohibited area for his ailing mother, only to be caught when the hat he left on the beach served as evidence—this 'Heiji Senbei' is shaped like that very hat. Since its founding in 1913, the ingredients have remained just three: flour, sugar, and eggs from Tsu City. Using no preservatives, they continue to bake them using the same unchanging method. There are 16 different shapes, and it is a labor-intensive confection where artisans bake each piece by hand. With a simple, gentle sweetness and a light, airy melt-in-your-mouth texture, it has been loved for a long time as a representative sweet of Tsu, while harboring a slightly poignant story.
