Mizu no Iro

There is a confection that shines like stained glass when held up to the light. 'Mizu no Iro' is a jewel-like dry sweet (higashi) created by the long-established 'Okashi Tsuchiya' of Ogaki. The ninth generation of Tsuchiya, with over 260 years of history, conceived this item as a tribute to Ogaki, the 'City of Water.' Each piece of thin, translucent agar jelly, lightly colored with natural pigments, is carefully handmade one by one. This confection is also known for being difficult to obtain as it is available strictly by reservation only. The transparent beauty of its five colors is just like the shifting nature of water itself. Simply gazing at it is enchanting. It is an exquisitely beautiful Japanese sweet nurtured by the abundant waters of Ogaki.
