Kincho-do Sohonten Ayugashi
In Gifu City, famous for the cormorant fishing on the Nagara River, sweets shaped like sweetfish (ayu) are a hallmark of summer. The "Ayugashi" made by Kincho-do Sohonten is one such sweetfish confection. Softly baked castella sponge gently encloses chewy gyuhi (mochi), with eyes and fins delicately rendered using a branding iron.
