Born from the bold idea of coating the miso-filled Ogaki Senbei—known as 'Japan's hardest rice cracker'—with caramel, Tanaka-ya Senbei Sohonten presents 'Matsuho.' Tanaka-ya Senbei Sohontens is a long-established shop in Ogaki, founded in 1859. They take their signature miso senbei, coat it with caramel, sprinkle it with coarse salt and powdered sugar, and then slow-bake it a second time. The sweetness and bitterness of the caramel harmonize exquisitely with the flavor of the miso. This is a new type of confection, sometimes called 'Neo-Wagashi,' born from Japan's hardest rice cracker.
