In Fukui, Mizu-yokan is a winter treat. It is a seasonal specialty that people long for when the weather turns cold. Egawa is a specialty shop for Mizu-yokan that operates only from November to March each year. The ingredients consist of only four things: agar, smooth red bean paste, granulated sugar, and brown sugar. Using Okinawan brown sugar as a secret ingredient, it is finished with a rich and elegant sweetness. Because no additives are used, it is highly perishable, truly reflecting the essence of the season. The thinly poured jelly has a smooth, silky texture that glides down the throat.
