Morihachi Hodatsu
This is a mochi-skin dorayaki adorned with gold leaf, named after the 'Hodatsuyama' gold mine of the Kaga Domain. Morihachi's Hodatsu features an impressive, elegant appearance, with soft mochi skin gently enveloping chunky red bean paste made from domestic adzuki beans, topped with a delicate touch of gold leaf. Morihachi was founded in 1625 under a mandate from the domain as the official confectioner for the Kaga Domain. Hodatsuyama, located in the northern part of the Kaga territory, flourished as an official gold mine since the era of the second feudal lord, Maeda Toshinaga, and became the source of Kaga's gold leaf craftsmanship. This confection, themed around that history and craft, is called 'Hodatsu.' With its fluffy mochi skin and the gentle sweetness of the chunky red bean paste, the shimmer of the gold leaf adds a subtle flourish. It is a moist delicacy that allows you to taste the history of Kaga.
