Produced by Kato Koyo-do in Kanazawa, these 'Uchiwa Senbei' consist of thinly pressed glutinous rice crackers coated with a honey glaze and shaped into small fans. Artisans hand-paint each piece with summer motifs such as flowers and birds. Because they are hand-drawn rather than printed, the finishing process requires an incredible amount of time and effort.
