Gateau Festa Harada Tigres

Despite being a small baked good that fits in the palm of your hand, an incredibly rich flavor spreads with just one bite. This is 'Tigres' from Gateau Festa Harada. 'Tigresse' means female tiger in French. It is said to be named this because the mottled pattern on the surface resembles a tiger. The dough is kneaded with plenty of almond powder and fragrant browned butter, baked with chocolate chips added, and smooth chocolate is poured into the central indentation. As expected from a baked good produced by Harada, famous for their rusks, the balance between the fragrant dough and the rich chocolate is superb.
