Pandero is a Portuguese baked good said to be the ancestor of Castella. This 'Tsukinoyama' (Moon Mountain) version features a milk and butter dough paired with dulce de leche (caramel), baked to a moist, semi-soft perfection. Its round shape represents the moon, echoing the name of Mt. Gassan. With a rich egg flavor, it offers a unique texture that is different from both Castella and soufflé.
