Wild Boar (Kamai) of Iriomote Island
The Ryukyu wild boar living in the deep mountains of Iriably Island has long been cherished locally as 'Kamai.' For the islanders, this game meat has historically been an important winter delicacy and a precious source of protein. The hunting season is open for only three months, from November 15th to February 15th each year. Fresh Kamai meat, which can only be tasted during this period, is renowned for having little odor and a prominent sweetness in its fat and umami. It is enjoyed in various island-specific dishes such as sashimi, stir-fry, and Kamai soup.
