This sweet potato shochu is produced by Kirishima Shuzo in Miyakonojo City, Miyazaki Prefecture, using 100% Murasaki Masari, which is also known as a 'phantom' purple sweet potato. The name comes from the fact that the polyphenols abundant in the purple sweet potato react with the citric acid in the koji, dyeing the mash a vibrant red during brewing. Because harvests are limited, it is delivered in limited quantities as a special existence. A rich aroma like wine and a lingering sweetness. Please take your time to savor its brilliance on the rocks or mixed with soda.
