Aso Dago-jiru (Dago Soup)
Chewy dago, taro, and burdock root. As you sip the warm miso-based broth, it gently relaxes your entire core. 'Dago' is Kumamoto dialect for 'dango' (dumplings). Flour is kneaded, rested, then stretched and torn by hand; this dough is simmered with seasonal vegetables in a miso or soy sauce broth. Because it is easy to prepare, nutritious, and filling, it has been enjoyed since ancient times as a meal during breaks from farm work. The Aso region is particularly famous for it, so much so that an area along the national highway is named the 'Aso Dago-jiru Highway.' A rustic and warm local flavor that varies in ingredients and taste from household to household. It is a comforting bowl of home that hits the spot especially on cold days.
