The lean meat melts smoothly in your mouth. The fat is not heavy, and the sweet soy sauce topped with grated ginger and garlic beautifully enhances the umami. It is said that the culture of eating horse meat in Kumamoto originated from a story involving Kato Kiyomasa, the first lord of the Higo Kumamoto Domain. It began when he consumed military horses due to food shortages during the Korean campaigns, and it is said to have spread within the domain because he continued to enjoy it after returning home. Since the Meiji era, it permeated among the common people, centered around the Aso region, which was a producer of military horses. The charm lies in being able to enjoy different flavors from each part, such as lean meat, marbled meat, and mane (kobe). Today, Kumamoto is the number one horse meat producer in Japan. A single melting slice holds a long history.
