Castella (Shooken)
Shooken is a long-established shop that claims to be the 'originator' of Nagasaki Castella. Founded in 1681, it is counted as one of the 'Three Great Castellas of Nagasaki' alongside Fukusaya and Bunmeido. Successive heads of the family have refined the Nagasaki Castella as a moist Japanese-style confection through various innovations, such as adding starch syrup. Notably, the eighth generation master was captivated by chocolate (which was rare at the time) and created 'Chocolatte,' a chocolate-flavored Castella that remains a flagship product loved to this day.
