This Junmai Ginjo Nama Genshu (unpasteurized) is the flagship sake brewed by Kameizuly Shuzo in Tosa City. Using yeast born in Kochi Prefecture, it stands out as a prominent presence in Tosa, where sweet styles are rare. While it possesses sweetness, a clean acidity lightens and tightens the aftertaste. When chilled well, it can be enjoyed like a dessert. The refreshing sweet and sour flavor glides smoothly down the throat. This is a Tosa cup that we would quietly recommend even to those who find sake a bit difficult to enjoy.
