Senchu Hassaku
An extra-dry sake with a sharp edge, bearing the name of an ideal from the end of the Edo period. 'Senchu Hassaku' is a Junmai sake brewed by Tsukibotann Shuzo in Sagawa Town. The name originates from the new national vision proposed by Sakamoto Ryoma while aboard a ship. This plan, which advocated for the return of political power to the Emperor and the establishment of a parliament, is said to have led to the later Charter Oath, making this a bottle imbued with Ryoma's ambitions. With a clean, extra-dry flavor and an impressive sharp aftertaste, it is a food-pairing sake that does not interfere with the flavors of dishes but rather enhances them. It pairs exceptionally well with Tosa fish dishes, particularly Katsuo no Tataki (seared bonito). Please savor this Tosa sake along with the name of the samurai who raced toward his ideals.
