Shodoshima Sesame Oil
When discussing the cuisine of Shodoshima, the highly aromatic sesame oil is indispensable. Hand-stretched somen noodle making has flourished on Shodoshima for about 400 years. A unique feature of this region is that while other production areas use cottonseed oil during the 'abura-gaeshi' process (the step where noodles are stretched thin), Shodoshima uses 100% pure sesame oil. Kadoya Oil, now known as Japan's largest sesame oil manufacturer, was founded in 1858 during the late Edo period as the 'Kadoya Oil Works.' It is said that the company name originated from the fact that the shop and factory were located on a corner at an intersection. This fragrant island sesame oil was nurtured by the culture of somen noodles. Just a drizzle at the end of cooking will significantly enhance the flavor of your dishes.
