When you take a bite, the flesh is firm and tight, and the scent of the tide gently wafts through your nose. While it looks calm, the Seto Inland Sea actually has fast-moving currents. Fish that are buffeted by these rapid currents are said to have firm flesh and concentrated umami. Spanish mackerel heralds the arrival of spring, and yellowtail—which has been selected as a Kagawa Prefecture fish—is also a highlight. Kagawa is known as the place where the first successful yellowtail aquaculture in Japan took place in 1928. In particular, sashimi made from Spanish mackerel, which loses freshness easily, is a delicacy that can only be truly tasted in its production area.
