Marugame Honetsuki-dori (Bone-in Chicken)

This is the Honetsuki-dori born in Marugame. Its origin is said to be the restaurant 'Issaku' in Marugame City, which began selling it in the 1950s, inspired by roast chicken seen in movies. This dish, made by roasting an entire chicken thigh, eventually spread throughout Kagawa and grew into a specialty second only to udon. In its birthplace, Marugame, many people still visit shops seeking this single piece of chicken. Whether you choose the chewy 'oya' (mature chicken) or the tender 'hina' (young chicken), deciding which one to pick is a pleasure unique to Marugame.
