It is a mellow, mild flavor that is neither pork nor chicken. It was born at 'Chukasoba Konran,' established in 1952. The first owner arrived at this recipe through trial and error, wondering, 'Can I create a new soup other than pork bone?' A local connection also played a part: there was a butcher shop next to the restaurant that would split and provide beef bones. The sweetness of the beef bone broth merged with the local sweet soy sauce to create this unique taste. A rare beef bone soup even on a national scale, it is a soul food that has been loved in Kudamatsu for over 70 years.
