Fukuyama is the top producer of kuwai in Japan, accounting for a massive 70% of the national share—making it the true heart of production. The round, blue arrowroot has a vibrant indigo surface, and due to its beauty, it is often called the 'Sapphire of the Rice Fields.' Because of the shape of its upright sprouts, it is regarded as a good luck charm that 'brings sprouts (growth/success)' when eaten, making it an indispensable dish for Osechi and celebratory occasions. This fluffy, sweet taste of Fukuyama adds color to the New Year's table. As the star of simmered dishes, it brings good fortune to the beginning of the year.
