Hatsuyuki (Tsuyama Confection)

Its name is derived from its whiteness, reminiscent of the first snow falling in Tsuyama. Legend has it that when Emperor Go-Daigo spent a night in Tsuyama while being exiled to Oki, an elderly woman from the village presented this sweet to him, and it has been passed down as a local specialty ever since. It is delicious whether eaten as is, baked, or fried, and it is said that in the past, it was highly valued as a preserved food and even as food for the sick. Its unpretentious, elegant sweetness pairs perfectly with tea. The way it melts in your mouth brings a sense of nostalgia and peace to the heart. It is a white, gentle confection that stays close to the history of Tsuyama.
