With its thin, crepe-like skin gently enveloping glossy whole red bean paste, it resembles a tiny woven straw hat. When you break through the fragrant skin, plump red bean paste from Hokkaido is revealed, spreading a moist sweetness. This famous Kurashiki confection was created by the founder of Kikkado in 1877. It is said that the name 'Murasuzume' (meaning 'gathering sparrows') came from the way the woven hats worn by people during harvest festivals looked like sparrows swarming around ears of rice. The skin, made with flour and eggs, was considered revolutionary for its time, similar to Western-style confectionery. The aroma of the egg-based batter paired with the simple sweetness of the red bean paste makes this a perfect souvenir for strolling through the Bikan Historical Quarter.
