Nebarikko

Tottori's original Japanese yam, 'Nebarikko,' boasts exactly the kind of stickiness its name implies. 'Nebarikko' is a variety born at a testing station in Tottori Prefecture, created by crossing Dune Nagaimo with the highly viscous Ichoi-imo. It is smaller and less prone to breaking than conventional Japanese yams, featuring a dense flesh. Its characteristics include low astringency, sweetness, and richness. The well-drained sandy soil of the dunes supports this deliciousness. The classic way to enjoy it is, of course, pouring grated tororo over piping hot rice.
