Enjoy the translucent, cherry-blossom pink flesh just as it is. The moment you bite into it, a rich, sticky sweetness rushes in. Its sweetness is said to surpass even that of Amaebi, and its plump, bouncy texture is irresistible. This is Mosaebi, known as the 'phantom shrimp' in Tottori. Its official name is Kurozako-ebi. They are caught in the deep waters of the Sea of Japan, but because they lose freshness so rapidly, they cannot be transported far. Therefore, most of the time, they can only be enjoyed at the source, making them a local delicacy. Savor the full extent of its sweetness as sashimi when freshly caught. When grilled with salt or added to miso soup, a different kind of umami emerges. It is a dish we truly want you to encounter when you visit Tottori.
