Kasumitsuru (Kami Town)
Located in Kasumi, Kami Town, facing the Sea of Japan, is 'Kasumitsuru.' Established in 1725 (Kyoho 10), it is a long-established brewery with approximately 300 years of history. The most significant feature of this brewery is that the entire production is brewed using traditional 'Kimoto' and 'Yamahai' methods. The local Mikata District is the birthplace of the Tajima Toji, one of Japan's four great brewing lineages, and the brewery continues to pass down these traditional techniques today. Its rich body and savory acidity enhance any dish. Kasumi is famous for Matsuba crab and Kasumi crab. The savory, umami-rich Kimoto and Yamahai sake pairs incredibly well with the sweetness of the crab. It is a local sake that perfectly complements the seafood of winter in Tajima.
