Chikusen is a renowned sake from Asago City, brewed with the clear waters of the Takeda River that flows through the mountains of Tajima. It is produced by Tajime Gomei Kaisha, founded in 1702 (Genroku 15). This long-established brewery has accumulated over 300 years of history, and the current head is the 19th generation. The brewery's roots trace back to Izumi Province (present-day southern Osaka). It is said that they arrived in the Tajima region in search of good water. The 'Chiku' (Bamboo) in the brand name refers to the Takeda River used for brewing, while 'Sen' (Spring) pays homage to their ancestors' homeland, Izumi Province. They are committed to crafting Junmai sake designed to pair with meals, using local rice centered around the brewery. A local specialty of Asago, a region famous for the ruins of Takeda Castle (the 'Castle in the Sky'). This is a bottle you will want to enjoy slowly at warm temperatures (nurukan) alongside local cuisine.
