Mt. Yukihiko (Tsubosaka Sake Brewery)
This is a mountain village sake brewed naturally using the subsoil water from the famous peak of Harima. Tsubosaka Brewery, which brews Mt. Yukihiko, began sake production in Kan'ei 6 (1629) and moved to its current location in Yumemae-cho, Himeji City, in 1805. The brand name was inspired by Mt. Yukihiko, one of the three famous mountains of Japan, which towers nearby. This brewery avoids using any temperature control machinery in the brewery, adhering to traditional natural fermentation methods where they judge the fermentation process solely by opening and closing the brewery doors to utilize the temperature differences between day and night. Produced from locally grown Yamada Nishiki rice and the pure subsoil water of the Mt. Yukihiko range, it offers a clean and simple flavor. It is a deeply flavorful bottle that reflects the bounties of the mountains.
