Kotsuzumi (Nishiyama Shuzojo)
A brilliant cup reflecting the blessings of Tanba, named by the haiku poet Kyoshi Takahama. Nishiyama Shuzojo, the brewery behind Kotsuzuzu, is a Tanba-based brewery founded in 1849 (Kaei 2). The brand name 'Kotsuzumi' was bestowed by the haiku poet Kyoshi Takahama, who shared a deep friendship with the brewery, through his poem: 'Here lies fine sake, named Kotsuzumi.' Due to this connection, it was introduced in haiku magazines and gained nationwide fame through mail order, which was rare for that time. Brewed with the underground water of Tanba, the sake is characterized by its delicate and gorgeous flavor. Even today, each bottle is carefully brewed in an atmospheric brewery designated as a National Registered Tangible Cultural Property. A deep commitment to raw materials lives on, such as the use of rice grown via organic farming methods. It is a flavorful local Tanba sake where every sip releases a story.
