A brewery in Tajima that focuses on Kimoto and Yamahai methods, complementing the bounties of the Sea of Japan. Kasumitsuru is a brewery founded in Kasumi, Tajima, in the 10th year of the Kyoho era (1725). Its former shop name, 'Fukuchiya,' is still fondly remembered by local residents. Specializing in traditional 'Kimoto and Yamahai brewing'—a process that requires no shortage of time or effort—it brings out a deep, complex flavor with the umami and richness of the rice. It pairs perfectly with rich local ingredients such as Matsuba crab and Tajima beef. When warmed (kan), the umami truly blossoms, creating a remarkable harmony with food.
