Kasumitsuru is a brewery founded in Kasumi, Tajima, in the 10th year of the Kyoho era (1725). Its former shop name, 'Fukuchiya,' is still fondly remembered by local residents. Specializing in traditional 'Kimoto and Yamahai brewing'—a process that requires no shortage of time or effort—it brings out a deep, complex flavor with the umami and richness of the rice. It pairs perfectly with rich local ingredients such as Matsuba crab and Tajima beef. When warmed (kan), the umami truly blossoms, creating a remarkable harmony with food. As a historic brewery approaching its 300th anniversary in 2025, we invite you to enjoy this flavorful sake, the pride of our seaside town, alongside winter delicacies.
