Sanyo Hai Shuzo, the brewer of Banshu Ikkon, is a brewery located in Yamazaki-cho, Shisō City, founded in 1837. The brand name carries the wish: 'Please enjoy a glass of local sake that utilizes the high-quality rice, water, and climate of Banshu.' Known as the brewery closest to Niwata Shrine, which is considered the birthplace of sake, they carefully brew using the subsoil water from Mount Hinoyama—the highest peak in Hyogo—and Banshu-grown Yamada Nishiki rice, employing the traditional techniques of Tajima Toji (master brewers). This refreshing, crisp, and dry sake is a reliable companion for meals, subtly enhancing the flavors of food. Its hallmark is a clear umami produced by the high-quality rice and water of Banshu.
