Oku-Harima (Shimomura Shuzoten)
A powerful Junmai sake handcrafted in a mountain brewery, perfect for serving warm. Shimomura Shuzoten, the brewer of Oku-Harima, is a brewery in Yasutomi-cho, Himeji City, founded in 1884. Surrounded by mountains and blessed with pure water and high-quality Yamada Nishiki rice, they continue to insist on brewing Junmai sake using only rice, koji, and water. With the family motto 'The excellence of handcrafting lies not only in skill,' every step of the process is carefully brewed by hand. Its robust umami and richness bloom even more beautifully when warmed. Its depth, being excellent both chilled and warm, has impressed many sake enthusiasts. The unfiltered, powerful 'Cho-Kara' series also attracts much popularity. This is a local pride of the Harima mountainside, born from a brewing process that spares no time or effort.
