Brewing 'Daikoku Masamune,' Yasu-fuku Matashiro Shoten is a brewery that has continued in Kobe's Mikage district since 1751, named after Daikokuten, the deity associated with bringing abundance to the dining table. While keeping sweetness restrained, it brings out the rich umami of the rice, featuring a clean, crisp finish that pairs beautifully with food. They cherish an approach of carefully brewing small batches, and their fresh, lively namazake (unpasteurized sake) is also highly popular. Having overcome the hardships of the brewery being damaged during the Great Hanshin-Awaji Earthquake, they continue to protect their flavor profile as a 'food-pairing sake.'
