A Junmai brewery with roots as a 'rice merchant,' allowing you to experience the pure umami of rice. Sawanotsuru is a representative brewery of Nishigo, founded in 1717 (Kyoho 2). Because it originated from a 'rice merchant' who handled the domain's rice, a deep commitment to rice and koji remains at the very core of its brewing process today. Its flagship 'sake made only of rice' is exactly as the name suggests—a single bottle carefully crafted using only the power of rice without any unnecessary additives. The reliable techniques of the Tanba Toji (master brewers), passed down for 300 years, create a robust umami and richness. At the adjacent 'Sawanotsuru Museum,' you can tour an old brewery and directly experience the brewery's philosophy of dedication to rice.
