Taishi Miso

Taishi Miso is a 'phantom miso' that was once on the verge of disappearing but has since been revived. When rice cultivation became difficult due to the acreage reduction policy in the 1970s, soybeans were introduced as a new crop, and the processing of these beans led to the creation of this miso. While it was once made in individual households, the craft declined as the number of producers decreased. In 2015, 'Taishi Kako LLC' was incorporated, and the miso was brought back to life through the hands of local mothers. The ingredients consist only of rice and soybeans from Taishi Town and salt from Ako. Made without any additives and with an extra amount of rice koji, this miso is characterized by its soybean aroma and simple sweetness. Please enjoy this authentic taste of home, which has also been selected as a Hyogo Prefecture certified food.
