On the iron griddle, the yakisoba and rice sizzle while coated in sauce. Amidst the fragrant steam, you can enjoy the combination of chewy noodles and fluffy rice all in one dish. It is said to have been born in an okonomiyaki shop in Nagata, Kobe. The story goes that during the 1950s, workers from nearby factories would bring leftover cold rice and ask the cooks to "warm it up together with the yakisoba." Eventually, the style of finely chopping the noodles and frying them with the rice became established, growing into a local favorite loved by busy factory workers and even neighborhood children. Nagata's soul food has now gained nationwide recognition. It is a delightful dish that satisfies both the stomach and the heart.
