Mochimugi Men (Glutinous Barley Noodles)
Mochimugi Men is a unique noodle with a chewy and bouncy texture, exclusive to Fukusaki Town. Fukusaki Town, known as the birthplace of folklorist Kunio Yanagita, has been cultivating glutinous barley, known as 'mochimugi,' since the early Showa era. Although production once ceased after the war, it was revived in 1983 as a local specialty. By using a unique noodle-making method with mochimugi flour milled using traditional techniques, these noodles possess the firmness of udon combined with the aromatic fragrance of soba. An additional charm is that they are resistant to falling apart even when boiled and contain beta-glucan, a type of dietary fiber believed to help lower cholesterol.
