Nori from Harima Town
Along the coast of Harima Town, nori is cultivated, benefiting from the bounties of the Seto Inland Sea. The Harima-nada Sea, centered around the Akashi Strait, features fast tidal currents. Combined with the winter seasonal winds, this creates an environment where high-quality, black, and glossy nori can thrive. Because it grows in waters so nutrient-rich that they produce Akashi sea bream and Akashi octopus, this nori is characterized by a high content of amino acids, which serve as the source of its umami. Hyogo Prefecture is known as one of Japan's leading producers of nori, yielding large quantities every year. A strength of Seto Inland Sea nori is its resistance to discoloration, allowing its color, taste, and aroma to last a long time. When used in temaki sushi or wrapped around onigiri, it provides a crispy texture and a wonderful, spreading aroma of the sea.
