Inagawa Botan Nabe (Wild Boar Hot Pot)
Botan Nabe is what warms the hearts and bodies in Inagawa Town during the cold season. It is a local winter dish of the mountain village, named 'Botan' (Peony) because the wild boar meat is arranged on the plate to resemble peony flowers. The boar meat is simmered with plenty of vegetables in a miso-based broth. Surrounded by the mountains of Hokusetsu, Inagawa Town is easily accessible from Osaka, making it a hidden gem for satoyama gourmet lovers who visit in search of this hot pot during winter. As it simmers slowly, the fat melts into the broth, integrating with the rich depth of the miso. The meat has very little gamey odor and pairs perfectly with both rice and sake.
