Inagawa Soba
This is highly aromatic handmade soba that can be enjoyed in the mountain villages of Inagawa Town. Featuring specialty 'juwari' soba (100% buckwheat) made with locally produced buckwheat and kneaded at the 'Soba no Yakata' within the Michi-no-Eki Inagawa. All served soba is made from buckwheat flour stone-ground within the facility; they take great pride in preserving local buckwheat grains at low temperatures and milling them daily to serve freshly ground and freshly kneaded noodles. The facility also includes a dojo where you can experience making your own soba, allowing you to enjoy the fun of kneading it with your own hands. Experience the rich flavor unique to freshly ground flour and the firm texture of juwari soba. It has a smooth and pleasant mouthfeel. Please take your time to savor a freshly prepared bowl amidst the air of the nature-rich satoyama landscape.
