Hamasaka Firefly Squid
The firefly squid of Hamasaka heralds the arrival of spring. They are seasonal messengers that come from the deep waters of the Sea of Japan. Firefly squid are small squid, about 6–7 cm in body length, and glow a pale blue when stimulated. They usually swim in the deep sea at depths of 200–300m, but are caught when they move to shallower waters to spawn in the spring. While Toyama Bay is famous for them, in recent years, the landings in Hamasaka, Shinonoe Town, have grown to boast the highest volume in Japan. While it is common for firefly squid—where freshness is vital—to be boiled before shipment, in Hamasaka, they can also be enjoyed as sashimi. With a plump texture and the rich umami of the internal organs, please enjoy this seasonal luxury.
