Tajima Duck
Tajima Duck is a breed of duck raised in the Tajima region, including Shinonsen Town. It is characterized by being raised slowly in a low-stress environment, primarily fed with our home-grown rice. Our eco-friendly farming method involves recycling duck manure as fertilizer for the rice paddies. By taking the time to raise them carefully, we produce a deep umami that intensifies with every bite and a clean, light fat. One of the reasons you can enjoy it with peace of mind is that everything from rearing to processing is managed consistently. In the cold season, fully enjoy its deliciousness in a duck hot pot.
