Matsuba Crab of Hamasaka
Hamasaka in Shinonsen Town is known as the 'Town of Crab,' and its winter protagonist is the Matsuba crab. With Hamasaka Fishing Port boasting one of the largest Matsuba crab landings in Japan, the entire town has worked together to cherish its crab culture. In the markets, crabs are meticulously sorted into over 100 different grades, and this thoroughness supports the high reputation of the Hamasaka brand. In 2007, the town pioneered a certification system for 'Crab Sommeliers' nationwide, with experts who have undergone training and examinations supporting the local crab industry. This is the king of winter delicacies, chosen by sharpened eyes of selection. Whether boiled, grilled, served as sashimi, or in hot pots, it is exquisite.
